Sitting down to breakfast is not often possible and it’s nice to have a healthy and delicious option you can prepare ahead of time. The bonus is one recipe that can be used in three different ways!
Store-bought granola can be filled with unwanted refined sugars and other additives making what should be a healthy option, a complicated one.
Making your own granola can and should be simple. Here, we will show you how to turn a simple granola recipe into granola bars, protein balls and a yummy cereal with your favourite milk.
This hemp seed granola recipe base is really simple and will leave your kitchen smelling delicious!
Vegan Hemp Seed Granola Ingredients
Base ingredients
- 3 cups rolled oats
- 1 cup hemp seeds
- ½ cup pecans
- ½ cup almonds
- ½ cup pepitas
- ⅔ cup dried goji berries or cranberries
- ½ cup coconut flakes
- ¾ teaspoon salt
- 1 teaspoon vanilla extract
- ½ cup maple syrup
- ½ teaspoon cinnamon - ground
- ½ cup coconut oil - melted
Additional ingredients for granola bars
- ¼ cup of Rapadura
- ¼ cup vegan dark chocolate chips
Additional ingredients for protein balls
- 1 cup of peanut butter
- ¼ cup vegan dark chocolate chips
- ¼ cup protein powder
Steps
Method for granola
STEP 1: Preheat the oven to 120-130°C and line a baking tray with baking paper.
Gently pulse the pecans, pepitas, almonds and coconut flakes in a food processor leaving it slightly chunky.
STEP 2: Combine nuts with all the dry ingredients, except the goji berries.
STEP 3: Add coconut oil and maple syrup to the dry mixture and combine.
STEP 4: Spread your granola mixture on and around the prepared baking tray.
STEP 5: Bake for 30 mins and then mix in the goji berries, bake for a further 20-30 minutes or until golden brown. Remove from oven and let cool on the tray.
Now you have the basic granola recipe that can be stored as-is, in an airtight container for up to a week.
Method for granola bars
**For this recipe, use only half of the base granola ingredients.
STEP 1: Preheat the oven to 180°C. Prepare and line a square tin and baking tray with baking paper.
STEP 2: Gently pulse the pecans, pepitas, almonds and coconut flakes in a food processor leaving it slightly chunky.
STEP 3: Combine nut mix with the oats and hemp seeds, then spread on the prepared baking tray. Place into the oven and bake for 8-10 mins. Stir the nut mix halfway through and bake until lightly toasted.
STEP 4: Combine the nut mix with the remaining ingredients. Add a little extra coconut oil if the mix feels a little too dry.
STEP 5: Spread your granola bar mixture in the prepared square baking tin, lightly wet your hands and firmly press the mixture into the tin. Sprinkle choc chips evenly on top.
STEP 6: Refrigerate for 2-3 hours and then cut the granola bars. Store in an air-tight container in the fridge for up to 2 weeks, or at room temperature for soft chewy bars for up to 1 week.
Method for granola protein balls
**For this recipe, use only half of the base granola ingredients.
STEP 1: Preheat the oven to 180°C and prepare a baking tray lined with baking paper.
STEP 2: Gently pulse the pecans, pepitas, almonds and coconut flakes in a food processor leaving it slightly chunky.
STEP 3: Combine nut mix with the oats, hemp seeds and hemp protein powder, then spread on the prepared baking tray. Place into the oven and bake for 8-10 mins. Stir the nut mix halfway through and bake until lightly toasted.
STEP 4: Combine the nut mix with the remaining ingredients, including 1 cup of peanut butter and ¼ cup of choc chips.
STEP 5: Lightly wet your hands and scoop a spoonful of mixture and roll into balls and place on a lined baking tray.
STEP 6: Refrigerate for 2-3 hours. Store in an air-tight container in the fridge for up to 2 weeks, or at room temperature for soft chewy protein balls for up to 1 week.
All three of these recipes will provide you with a healthy protein-rich breakfast or a quick snack on the go. You don’t have to worry about refined sugar and they’re completely vegan.
