Ingredients
- Chicken breast
- Organic hemp oil
- Hemp seeds
- Eggs
- Breadcrumbs
- Flour
- Salt & Pepper
- Fresh washed baby spinach
- halved lemon to finish
- Sliced avocado
Steps
STEP 1: Tenderise chicken breast between two pieces of plastic wrap until flat, 1-3cm thickness, depending on what you like. Don’t over-tenderise to the point where it falls apart.
STEP 2: Prepare your breading station with three parts – flour, eggs and breadcrumbs. For the eggs, lightly whip with a fork until thoroughly mixed.
Then, mix hemp seeds with your choice of breadcrumbing. Add seasoning and salt & pepper to the crumbing mix.
STEP 3: Dip chicken in flour, eggs, crumbing – in that specific order 2-3 times total, depending on coverage and thickness of crust you want.
STEP 4: Pan fry in organic hemp oil for 6-10 minutes or until thoroughly cooked and golden brown on each side.
STEP 5: Assemble baby spinach base on a plate, place chicken on top and drizzle with leftover pan oil. Finish the dish with a few drops of organic hemp oil and the juice of a small, halved lemon and sliced avocado.
