Ingredients:
- 1 medium cauliflower
- 1 red onion
- 1 tablespoon ground chilli
- 1 half of an orange
- ¾ cup hemp oil
- ½ cup red wine vinegar
- Salt
- Pepper
- 4 heaped tablespoons of Greek yoghurt
- 2 cups fresh parsley
- 1/3 cup cranberries
- ½ cup chopped pistachios
- ½ hemp seeds
Steps:
- Cut up the cauliflower and chop up the red onion.
- In a separate small bowl, combine the ground chilli and hemp oil. Then squeeze orange juice into the mix.
- Drizzle the chilli mix over the cauliflower in a pan. Make sure the cauliflower is covered well.
- Bake cauliflower in the oven at 200c for 30 minutes.
- Combine chopped red onion with red wine vinegar.
- Remove cauliflower from oven and season with salt and pepper.
- Serve the cauliflower on a bed of Greek yoghurt.
- Add red wine mix and top with dried cranberries and chopped pistachios.
- Finally, sprinkle with hemp seeds and fresh parsley.
- Serve and enjoy!
