What is ceviche?
Great as an entree, snack or light meal, ceviche is a Hispanic American dish. It generally has raw fish in citrus juice and includes notes of spices and other seasonings.
While it is often enjoyed with corn chips, it can also be served on tacos or bread. It’s a great recipe to serve and bring out during the warmer months as it is considered a fresh dish. Perfect for days by the pool or as a starter when hosting a BBQ with friends and family.
If you’re looking to get your source of hemp nutrition, we have created our own take. Adding a sprinkle of hemp seeds to the finished product, the crunch in the hemp hearts complements the dish. It also blends with the flavours beautifully, resulting in a delicious hemp-style take.
Ingredients:
- 1 pack of pink salmon, drained, skin removed and diced
- 1 red chilli, thinly chopped
- 1/2 red onion, diced
- 1 clove of garlic, finely chopped
- 2 medium red tomatoes, diced
- 1 avocado peeled and diced
- fresh coriander to garnish
- a handful of hemp seeds
- 1 squeezed lemon juice
- 1 squeezed lime juice
- 1 pack of corn chips
- ¼ teaspoon paprika
- ¾ teaspoon cumin
- Salt
Steps:
- Cut up and prepare the salmon, chilli, red onion, garlic and tomatoes.
- Add the diced onion, chilli, salmon, tomato and garlic into a medium stainless steel bowl and mix slightly.
- Sprinkle the paprika and cumin on top and continue tossing the ingredients until it is well mixed.
- Add the freshly squeezed lemon and lime juice over the bowl contents and a few sprinkles of salt. Taste for flavour and add more salt if required.
- Slice the avocado and put into the bowl and toss it gently.
- Finish with a sprinkle of hemp seeds.
- Spread the corn chips on a serving plate.
- Transfer the contents from the bowl on top of the chips.
- Top the mix with fresh coriander as a garnish and serve.
